The Pais grapes come from a 0.3-hectare vineyard with 150-year-old vines. After crushing and destemming, the fermentation takes place in open amphorae, with a four-week maceration on the skins. The wine then undergoes malolactic fermentation and is aged for 11 months in neutral oak barrels.
